MexiMash Nachos

      This was a huge hit in my house the other night y'all. Nothin even left for left overs! Plus it's super affordable.

What You'll Need:
•1 lb lean ground beef (can substitute ground turkey for a healthier alternative)        
•1 packet taco seasoning
•1 bag Nacho Cheese Doritos
•1 box of taco rice
•1 can or jar of nacho cheese

1. Brown your meat.
2. Cook your rice in a separate skillet.
3. Warm your nacho cheese on low on the back burner.
4. Drain your meat and add taco seasoning.
5. Mix meat, rice, nacho cheese in a large pan.
6. Scoop out over your doritos and bam y'all. You have your nachos!

      Now there are a gazillion ways to change this up y'all! You can put all the ingredients in a casserole dish then crush the doritos on top of it just toss it in at 350° for 20-25 mins. You can add shredded cheese to make it extra cheesey, beans, sour cream you name it. Have fun with it y'all and enjoy! I know we did!!

Home Made Cinnamon Spread

       Let me tell you about this heaven in a jar. It's gone the same day I make it because the kids and my honey love it! Super easy to make, cheap ingredients and stores well. Home run in my book y'all.

What you'll need 

  • 1 stick of unsalted butter (softened)
  • 3 tbsp sugar
  • 1 tbsp cinnamon 
  • Small splash of vanilla 
  • Small storing container
Steps:
  1. In a small bowl use a fork to mix softened butter to remove all lumps and make it the consistency of a spread. 
  2. Mix in cinnamon and sugar, I find a folding motion to work best. 
  3. Add in your splash of vanilla and mix well.
  4. Spoon into your storing container and pop in the fridge. 
Now play around with this, you may like more cinnamon or sugar etc so play with it to match your taste buds. We use it on toast, dinner rolls etc. Enjoy y'all!
